A Pinch of Honest Food

Some of you may know this, but for those that don’t, any chance I get to work with the founder of A Pinch of Salt, Raquel, I jump at the opportunity! 

This time I was fortunate to work with A Pinch of Salt and Shark Tank, Jackson’s Honest Chip, to create a dish that incorporated one of eight chips the company offers. After tasting each chip Raquel knew that Fried Coconut Shrimp coated in Jackson’s Honest Lime & Sea Salt chips served with Mango Salsa would be an instant success. Being that I am an expert in food tasting she was right!

When asking Raquel why she chose to make Fried Coconut Shrimp she responded: 

“The crunchy texture and subtle coconut flavor of the tortilla chip instantly made me think of preparing a dish that was tropical, fresh and lively. I prepared Fried Coconut Shrimp coated in a dusting of Jackson’s Honest Lime & Sea Salt served along with a cucumber and mango salsa.  Together the flavors of coconut and lime provided a delicious background showcasing the wonderful flavors of Jackson’s Honest Lime & Sea Salt.” 

Today I learned that chips should not just be eaten straight of the bag, but get creative with it and most importantly play with your food. Thank you, A Pinch of Salt and Jackson’s Honest for letting be apart of this and share this story!
